Faux Spaghetti

When Life Gives You Zucchini…

… You make fake spaghetti! No I haven’t gone mad yet, or maybe just slightly. As a red blooded italian pasta is in my dna. I make it. I cook it. I eat it. I actually believe it solves most common problems including crankiness, loneliness, bad hair days, etc. But every now and then I love to experiment with something new and put it on rotation in my kitchen. While I am not one to buy useless gadgets this one was too fun to pass up. I got myself a spiralizer and started cranking out zucchini pasta like it’s going out of style. But the seasoning was the real problem… Should I go vegan all the way or try something fun? Yeah you know the answer already… I obviously picked the fun option. On the Amalfi coast we often eat linguine with shrimp and zucchini, one of my favorite pairings. So the decision was easy but I wanted to give this trompe l’oeuil pasta an additional kick and went for asian flavors instead. The recipe is easy and the meal is ready in about 15 minutes (one of my personal records considering that this dish looks, smells and tastes like something out of a 5 star kitchen.

  • 4 zucchini
  • 0.5 lb raw cleaned deveined shrimp (thawed if you are using frozen)
  • 1 cup of edamame
  • 2 cloves of garlic, minced
  • 1 inch ginger root, minced
  • 2 tablespoons of mirin
  • 1 tbsp of soy sauce
  • 4 tbsp of hot sesame oil
  • a pinch of salt

Using a spiralizer process the zucchini to obtain the faux spaghetti. Divide the “spaghetti” among 4 plates. In a large pan over medium heat sautee garlic and ginger with the hot sesame oil for about 3 minutes. Add the edamame and sautee for additional 3 minutes. Then add the shrimp and sautee for 5 more minutes. When the shrimp is getting opaque add the soy sauce and mirin and keep cooking until the shrimp is completely cooked (this should take a few minutes so keep an eye on the pan) season with salt. Divide the shrimp and the sauce among the 4 plates and serve immediately.
