I had so much fun making this video: homecook meets Bruce Lee! First let me tell you why you should spatchcock or butterfly a chicken. It allows the chicken to lay flat and cook evenly.  A flat surface cooks faster and helps you retaining the juices so your chicken will stay moist and flavorful.  It is also a lot easier to season and baste.  I hope you give this technique a try, because it is fun and worth the effort!
