PhotoRecipe: Turkey Avocado Wrap

Dear Friends & Eaters,

This is the fourth and last recipe from the Lunchbox Event in March. I created it because I love wraps: to me they are like eating a sandwich with half of the guilt and they remind me of one of my favorite traditions from Romagna, piadina.  This recipe has a light and creamy texture and is very colorful because as always you eat with your eyes first. It alse has lean protein, whole grains and lots of veggies and food fats.  These wraps are beautiful AND good for you!

  • 4 whole wheat wraps
  • 1 red bell pepper, cut in strips
  • 1 yellow bell pepper, cut in strips
  • 1 avocado, sliced
  • 16oz grilled turkey breast, sliced
  • 2 cups of arugula
  • 1 lemon juiced
  • 1 tsp of Dijon mustard
  • ¼ tsp salt

Step 1: Roll out the wraps on a cutting board.  Place 4oz of sliced turkey on each wrap and set aside.

Step 2: Mix the Dijon mustard, salt and lemon juice into an emulsion.  Coat the slices of avocado with the mixture.

Step 3:  Place the pepper strips and ½ cup of arugula on each wrap along with the ¼ of the macerated avocado.

Step 4: Fold the edges and roll the wraps.  Cut the wraps in 2 with a serrated knife.
