In 2006 I went to Sweden for work and spent a week in Stockholm. Besides the fact that Swedes are awesome and they know one or 2 things about having fun, I discovered that like Italians they have a sweet tooth…. I went to a restaurant and I was served this dessert: a fruit based white chocolate gratin that is super easy to make and VERY versatile. You can make it gluten free or vegan just by switching the white chocolate and gelato for the relevant garden varieties. And it is fairly guilt free as the main ingredient is indeed fruit.
