PhotoRecipe: Cream Cheese & Chocolate Truffles

This recipes were created for a wonderful fundraiser for the American Cancer Society, Taste of Hope. I am so thankful I was invited to participate and I am glad I can contribute to raise money for a cause I believe in. These two recipes will be served at my table today along with gelato from SOTTO ZERO, with flavors created specifically for this event!

Dark Chocolate/Cream Cheese Truffles (recipe makes approx. 50 truffles)

8oz. cream cheese (1 package)

3 cups of sifted confectioner sugar

a pinch of kosher salt

1 tbsp of vanilla extract

3 cups of semisweet chocolate

1 cup of roasted almonds

8 graham cracker squares

Place the almonds and the graham cracker in a food processor and pulse until they have the texture of breadcrumbs. In a bowl sift the sugar and add the softened cream cheese, the kosher salt and the vanilla extract. With a stand in mixer or a hand mixer combine the ingredients. Melt chocolate in a microwave oven, in 30 seconds intervals, stirring the chocolate from time to time to avoid burning. Mix the melted chocolate with the  cream cheese mixture until completely combined.  Using  a mini icecream scoop form the truffles and roll them in the almond and graham cracker mixture.

White Chocolate/Cream Cheese truffles (recipe makes approx. 60)

3 cups of sifted confectioner sugar

a pinch of kosher salt

1 tbsp of vanilla extract

3 cups of white chocolate

2 cup of roasted unsalted pistachios

8 graham cracker squares

Place the pistachios in the food processor and pulse 10 times. Remove half of the pistachios crumbs and set aside. Place the graham crackers in the food processor with the remaining pistachios and pulse until they have the texture of breadcrumbs. In a bowl sift the sugar and add the softened cream cheese the pistachio crumbs set aside, the kosher salt and the vanilla extract. With a stand in mixer or a hand mixer combine the ingredients. Melt chocolate in a microwave oven, in 30 seconds intervals, stirring the chocolate from time to time to avoid burning. Mix the melted chocolate with the  cream cheese mixture until completely combined.  Using  a mini icecream scoop form the truffles and roll them in the pistacchio and graham cracker mixture.
