Dear Friends and Readers,
After an intense holidays season it is time for me and the pirate to detox. So I turned to a couple of staples of Italian light cuisine: Collard Green Soup. So are you ready to learn how to make one a perfect detox food? I am so going to enjoy this especially when it is cold outside.
1 cup of chopped onions,
1 cup of carrots, chopped
1 cup of celery, chopped
3 bunches of collard greens (approximately 6 cups) washed and cut into spaghetti size strips
1 8oz can of cherry tomatoes
2 zucchini, chopped
2 small potatoes, pealed and chopped
salt and pepper to taste
2 cups of low sodium/low fat chicken broth
4 cups of water
zest of one lemon
This recipe is very satisfying but very easy to make. Place all the vegetables in a stock pot (I have a very large one that I use for this soup so I can make more and eat it over the week). Pour the liquids and bring the pot to a boil. As soon as the soup starts boiling, reduce heat to medium and let it simmer for approximately 1 hour.
This soup can be served as is or if your detox is not as strict as mine you can splurge with one tbsp of EVOO and maybe a little grated parmigiano!
