PhotoRecipe: Artichoke Dip Recipe

Dear Friends and Followers,

one of you last week commented that she has to prepare a dish for an event and wanted to pick my brains on what to make. Well here it is: this is a very well known recipe, artichoke dip, but adding a few ingredients it becomes really the tastiest one you have ever had. I make it for every party and it is always a success to the point that my friends actually ask me to make it every time.

  • 2 cans of artichokes hearts
  • 2 cups of reduces fat mayo
  • 1 cup of shredded mozzarella cheese
  • 1 cup of grated parmigiano cheese
  • 1 jalapeno, cored and chopped thinly
  • 1/2 tbsp chopped chives
  • 1/2 tbsp of chopped basil

The key for the success of this dish is the first step: squeeze the artichoke hearts and leave then to drain completely in a colander for 15 min. Preheat the oven to 375F. Shred the artichokes in a bowl, add all the other ingredients and mix until well combined. Pour the mixture in a gratin dish and level it so that it is even on top.

Place the gratin dish in the oven and bake until it is golden brown and bubbly.

Serve with some crostini, or even better with my focaccia!
