Ingredients of the puff pastry I learned from my mom:
1 1/4 cups of all purpose flour divided as described below
1/2 cup unsalted butter
a pinch of salt
ice cold water as described below
Pour 1/4 cup of flour in a bowl and mix with the butter, set aside. Mix the remaining flour with salt and enough water to create a dough. flatten the dough with a rolling pin and place the butter flour mixture in the centre. Cover the butter mixture with the dough, flatten the square and fold in thirds. Place the dough in the refrigerator for 15 minutes, after which flatten the dough again and fold in thirds. Repeat the refrigeration and folding 4 times and then your puff pastry is ready to be used or refrigerated.
As you can see this process takes at least 1 hour… to much time to be prepared during the NFNS6, but there you have it!
